CORN ON THE COB.
Seriously, why didn’t I think of this sooner?! Sam has been going nuts for a well cooked corn on the cob, it’s perfect for teething, is sweet and since she mushes a few kernels at a time I don’t worry about it being a choking hazard. (At least for her it isn’t) We can finally eat dinner in peace thanks to the cob. Now on to this week’s menu!
Monday- Taco Soup (If you follow P’s twitter than you know he’s been making fun of my taco soup idea all day, I believe he said “taco soup or liquid poop?” But you know what? It was DELICIOUS!)
Only changes I made are seasonings. I added Salt, Pepper & Garlic Powder to taste once it was done simmering. Then I also chose to top it with chopped fresh cilantro. Looking forward to these leftovers!
Tuesday- Lighter Sesame Chicken
Wednesday- Garlicky Pork chops with Apple, Leek & Squash Gratin
This is my go to pork chop preparation, make a garlic paste by roughly chopping a few large cloves, then sprinkle with coarse salt. Smoosh the side of a large knife against the salted garlic until it begins to form a paste. The coarse salt basically breaks down the garlic. Season chops with pepper and then smear garlic paste onto both sides. Cook in a med heat skillet (too high and the garlic will burn) that been coated with extra virgin olive oil. Cook for around 4 min each side.
Thursday- Vegetable Tartlets
Sunday- Salsa Verde Turkey Burgers (So Yum!)
